My family loves Monopoly, as for me, I have a love/hate relationship with Monopoly.  When I was growing up my family played three board games, Risk, Aggravation and Monopoly.     Everyone in my family loves bread, cheese and meatballs. How could I go wrong with a toasted Italian sub?  I couldn’t and I didn’t. This is amazing and it went FAST!  I needed a quick meal during a busy week and while running through the meat department at my grocery store, I spotted pre-made meatballs. I have never bought them before, always make them myself. However, time crunch! I was game. Grabbed a loaf of fresh baked French bread, a jar of sauce and some Parm Romano. Voila. There are just a handful of meals that every member of my family will eat and one is Beef Enchiladas,  which for all intents and purposes, is really Cheesy Beef Green Chili Enchilada Stacks.  Too long right?  Beef Enchiladas encompass it all.     When I was growing up my mom worked full time. In spite of this, she always had a home cooked meal on the table by 5:30.  I truly admire this! When I think about it, I don’t know how she did.  I did cook when I worked full time but it was not every night and it was just for me and my roommate, my sister. She cooked a lot too.     This yucky January weather has me pining for hot, summer days. Thought I would pull a sun-shiney post out to feel warm and happy. Every Summer we go away to Horsetooth Reservoir and stay in their lake front cabins. We love it and it has become quite a family tradition. We go with my extended family. We usually have about 20-30 people around at any given time. The kids all play on the beach, the adults play cards and have a great time.     We love living in Colorado, we have plains, mountains and the foothills in between. There is never a lack of places to visit and enjoy. One of our favorites is Manitou Springs, just west of Colorado Springs. It’s just over an hour from our house and easy to get to. This past year we visited the Cliff Dwellings and Museum.  We invited some good friends along and had the best time!  The kids loved it!
