When I was growing up my mom worked full time. In spite of this, she always had a home cooked meal on the table by 5:30. I truly admire this! When I think about it, I don’t know how she did. I did cook when I worked full time but it was not every night and it was just for me and my roommate, my sister. She cooked a lot too. So yes, I admire and appreciate the fact that mom always had a delicious, hot meal ready for us every evening. She always found a way to be inspired and use the ingredients she had available.
I would love for my children to remember delicious, home-cooked meals from their childhood as well. It is a pleasure to do this for my family. That being said, my children can be very picky! This, at times, drives me crazy and yes I have been a short-order cook when someone doesn’t like what I have made. I can’t let them go without eating! This chicken recipe that I am about to share…. this is a hit with every, single, person in my family!
Out of every chicken recipe I have ever made this, hands down, is the best one of them. This is fool proof and only THREE ingredients!! Here it is:
Mrs. O’s Cheez-It Chicken Recipe
3 lbs boneless, skinless chicken breasts
1 1/2 cups Mayo
3 1/2 cups Cheez-Its
Put mayo into a bowl, cut breasts into 1 1/2″ strips, grind Cheez-Its in blender, pulse to preference of breading size. Add several pieces of chicken to the mayo, stir, using a fork, pull a strip out and dip into the crumbs, turn over. Place on a cookie sheet covered in parchment paper (trust me) I have have made this too many times without and had sticking problems. Parchment paper make its simple, easy and clean!
Place in the oven at 375 degrees. Turn at 15 minutes and then cook an additional 10-15 minutes. Allow to cool for a few minutes and serve. I like to serve it with mashed potatoes, mac n cheese and green beans.
