There are just a handful of meals that every member of my family will eat and one is Beef Enchiladas, which for all intents and purposes, is really Cheesy Beef Green Chili Enchilada Stacks. Too long right? Beef Enchiladas encompass it all. These are different than most conventional enchilada recipes but honestly, I only like my Moms Red Chili and I have yet to learn how to make it. MOM! She makes a delicious, savory, spicy red chili that cannot be duplicated. So I make my enchiladas with our generations old family Pork Green Chili Recipe, it is amazing!.
After you get the chili started and simmering, start browning the ground beef and then start working on the stacks. Cut up 10 corn tortillas in strips and arrange on the bottom of your baking dish.
Next sprinkle some cheese over the the tortilla strips, then add a layer of ground beef.

Then start over with tortillas, cheese, beef, chilis, then top with cheese…
Bake at 350 degrees for 20 minutes.
The family loves them plain, however I like to add onion and tomatoes. Avocados too but we ate them all yesterday.
This is a fairly easy dish once you get the green chili down. Enjoy!
