Homemade Chocolate Chip Muffins
I love chocolate and I love muffins, so why have I never made chocolate chip muffins? Well now I have and I found an excellent recipe on Allrecipes.com. These turned out good, with some modifications. My kids and husband gobbled them up.
Here is the recipe in it’s original form, I improvised based on some reviews I read, I will post my changes in parenthesis.
- 2 cups all-purpose flour
- 1/2 cup sugar (+ 1/4 cup brown sugar)
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 egg
- 3/4 cup milk (1 cup of milk)
- 1/3 cup vegetable oil
- 3/4 cup miniature semisweet chocolate chips
- (2 tbsps of cocoa powder to the mix)
In a large bowl, combine the first four ingredients. In a small bowl, beat egg, milk and oil. Stir into dry ingredients just until moistened. Fold in chocolate chips. Fill greased or paper-lined muffin cups three-fourths full. Bake at 400 degrees F for 18-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing to a wire rack.
One other change: I made mini-muffins so I adjusted time and temp.
I cooked on 375 for 15 minutes
You can’t beat a good muffin and these look pretty good I must say.
Looks great! I’ll have to give the recipe a go one day.
